Vegetarian Lasagna

Extremely tasty! Superb food for any day of the week.

Ingredients:
- 12 lasagna sheets
- 2 packages of spinach (ca 400g)
- 1 eggplant
- 1 bottle of tomato juice (ca 1L)
- 200g feta cheese
- A bundle of dill
- A bundle of parsley
- 100g cheese
- 1 pack of champignon mushrooms
- 2 onions
- 2 cloves of garlic
1. Set the oven to 180*c.
2. Cut the onion into small pieces and fry them together with garlic in a cooking pot. Wash the spinach while the onion is frying. Add the spinach along with some parsley and dill into the cooking pot when the onion turns a golden color. Stir until the spinach is soft. Let the fried vegetables cool down and add crumbled feta cheese.
3. Cut the rest of the vegetables (mushrooms and eggplant) and fry until they are soft.
4. Pour some tomato juice in the form, enough that a layer of it is formed. Place a layer of lasagne sheets with the mushrooms, tomato juice and eggplant on top. Make two new layers with the lasagna plates, and top with spinach. The last layer is only lasagna plates and the rest of the tomato juice. Top with cheese.
5. Put in the oven for 30 minutes. Enjoy!
